The protein that goes with almost anything, this is a go to on my list for any occasion. Skewering is particularly great for summer grilling season and gatherings, but I also love using this same balsamic marinated chicken for pasta salads, quinoa bowls, and salads.

Herby Balsamic Chicken Skewers

Description

These are delicious, savory chicken skewers that are great for any occasion!


Ingredients

Scale
  • 2 lb chicken thighs – boneless skinless
  • 2 teaspoons kosher salt
  • 4 cloves garlic
  • 2 tablespoons balsamic vinegar
  • 1/2 bunch chopped cilantro – chopped, about 1/4 cup
  • black pepper
  • 1 tablespoon neutral oil – grapeseed, canola, or sunflower oil

Instructions

  1. Prep the chicken ingredients – cut all the cilantro, chop the garlic, then cut the chicken into 1″ pieces. Mix the chicken with the chopped cilantro, garlic, balsamic vinegar, black pepper, and kosher salt. Give everything a mix.
  2. Skewer the chicken, then pan sear or grill on medium high heat for about 12 minutes, flipping occasionally. The thickest chicken piece should reach 165. Garnish with additional cilantro leaves, and serve!

Notes

You can have this marinating in the fridge for up to three days.

I prefer using chicken thighs for this recipe, but you could also do this with chicken breast as well.
