Summer Meal Plan – Week 11

We officially only have 3 more weeks of “Summer Meal Plans”, so you know this week (and the next few) are going to be filled with all the summer produce!

This week has not 1, not 2, but 3 new recipes! I’m super stoked for you all to try the pickled tomatoes on easy roast salmon. It was inspired by the pickled tomatoes we made in culinary school, and this is just a simplified version for the home cook. Hope you enjoy!

Sunday – Sweetgreen Crispy Rice Bowl

Another popular request since I’ve started making copycat recipes for the Sweetgreen bowls, this Crispy Rice Bowl with Spicy Cashew dressing is a hearty and fun take on salad prep!

Monday – Pickled Tomatoes on Easy Roast Salmon

A new recipe inspired by my time in culinary school, these pickled tomatoes are incredibly fragrant and aromatic. Served on easy roast salmon with a side of charred broccolini and wild rice, it’s the perfect summertime meal!

TuesdaySesame Noodles with Chicken and Zucchini

This recipe is easy, no frills, and packed with summer produce like zucchini and corn. Make extra of the sesame sauce

Wednesday – MAPO Tofu

Use / substitute that extra 1/2 lb of ground chicken from the sesame noodles in my easy mapo tofu, and you’ve got yourself another super easy weeknight dinner.

Thursday – Stonefruit Burrata Caprese

I need to include this in the meal plan one more time before the end of Summer Produce season. If you want to keep things simple, pair this with some sourdough bread. If you’ve got hungry teenagers or want some heartier to pair with this, try also making my herby balsamic chicken pasta salad.
