Summer Meal Plan – Week 12

We’re just 3 weeks away from the wedding and I’m definitely feeling a bit more pressure to figure out all the last minute details before the big day! My meal plan this week is reflective of just keeping things EASY, and let’s get into it.

monday – SWEETGREEN Guacamole GREENs Bowl

Kicking the week off with an easy salad meal prep – this is a copycat recipe for the Sweetgreen Guacamole Greens Bowl. It’s like the Salmon Taco Bowl, but with Chicken!

tuesday – Honey Gochujang Steamed Chicken

I haven’t had steamed chicken for a while, so pulling this back on the menu this week to enjoy. I’ll be pairing this with multigrain rice and a fried eggs.

wednesdayItalian Sausage ORZO

One of my 30 minute dinners that tastes like it’s restaurant grade! I’m so looking forward to whipping this one up this week.

Thursday – korean meatballs with yakisoba noodles

These korean inspired meatballs are some of my favorite things to eat with a stir fried, veggie packed yakisoba noodle. This recipe has it all and makes a generous portion for leftovers (or company!).
