Summer Meal Plan – Week 13

This is officially the last week of my summer meal plans! Since there are technically 4 seasons and 52 weeks in a year, there should be 13 weeks for each season. Sometimes it feels like some seasons are longer than others, but right now, I really don’t want summer to end. Long days, warm weather, tomatoes, stonefruit – I will miss it all!

monday – Elevated Tuna Salad

Bringing back tuna salad into the rotation this week! Instead of garlic aioli, I’ve been making this with WHOLE FAT greek yogurt, and it’s phenomenal. I’ve also been adding in the quickest pickled red onions, and they make this super delish.

I’ll be making this for my meal prep lunches this week, and topping it on a bed of romaine, persian cucumbers, cherry tomatoes, and this dill chamgpagne vinaigrette.

tuesday – Smashed Tacos with Easy Guacamole

Switch things up on taco Tuesday with these incredible smashed tacos with easy guacamole and a cucumber tomato salad. I LOVED this recipe – it’s such a fun take on tacos, and I totally understand how a version of these went viral earlier this year.

wednesdayEasy Pan Seared Petrole Sole with Sauce vierge

The last week of summer has to include some form of sauce vierge, and this easy pan seared petrole sole is my choice this week!

Thursday – Easy MApo Tofu with Steamed egg and Multigrain rice

It’s been a hot minute since I made my ultimate comfort food! I never get sick of this, and it’s the best quick weeknight dish to whip up if you’re craving chinese food 🙂

Friday – Summer fresh roll party
