Summer Meal Plan – Week 3

This is week 3 of summer meal plan! I was so inspired by my recent trip to New York City, there are many new recipes in the meal plan this week, and I can’t wait for you to try them all.

MondaySuper green goddess Chicken Salad meal prep

This super green goddess chicken salad meal prep was inspired by a delicious lunch I had a Sweetgreen. There are roasted sweet potatoes, slightly spicy broccoli, crunchy red cabbage, and a delicious and creamy green goddess ranch dressing.

tuesdayItalian Sausage Orzo

This dish is a one pot meal that has incredible flavor, tastes like restaurant quality, and comes together in just about 30 minutes. It uses a similar method to another fan favorite dish, my Mushroom and Spinach Orzo with Spiced Chicken. I used a broccoli rabe in this recipe, but if you prefer a milder vegetable, feel free to substitute with chard or spinach.

WednesdayStir Fried Cauliflower with Mushrooms and Ground Pork

This is a recreation of one of my childhood favorite meals – stir fried cauliflower. The combination of crisp tender cauliflower, carrots, mushrooms, and pork is such a delicious treat, and so easy to whip up. I’ll plan to pair this with multigrain rice, but feel free to pair with noodles or plain rice.

I found these 12 ounce baby cauliflower bags at Trader Joe’s and this dish is perfect to use them!

Thursday – Brown Butter Japchae

These chewy, sweet potato noodles are one of my new favorite easy weeknight meals. This dish is packed with veggies, versatile with whatever you have in the fridge (you can substitute basically any veggie & protein), and the brown butter + soy sauce combo is incredible!

FridaySheet Pan Pizza Salad with Spring Veg, Burrata, and Mint

When I’m in the mood for pizza, this sheet pan pizza is my go to. It comes together in 30 minutes, and is so much better than takeout. The dough does require some prep work and planning, but once you commit, it’s easy!
