Summer Meal Planning – Week 4

This is week 4 of summer meal planning! I knew I was up against a packed schedule and needed healthy, delicious prep in my fridge. This week includes a lunch meal prep, 2 fresh salad bowls for dinner, a marinated chicken for 2 different dinners, and my new favorite healthy meal for one (10 minute beef tacos!)

SUNDAYThai Coconut curry meatballs

Thai flavors in a delicious, cozy meal, these Thai coconut curry meatballs are a special treat. Paired with sautéed veggies, this is a well balanced, easy weeknight dinner or meal prep item for the week!

MondayBBQ Salmon Salad with Mango Cucumber SLAW

This week, I’m bringing back my BBQ salmon bowls with quinoa, salmon, and a mango cucumber slaw. I look forward to these bowls SO MUCH, and can’t wait to remake this recipe.

tuesdayGinger Scallion Chicken Salad Bowls

This is one of the first dinners this week using my marinated ginger scallion chicken. I like to prep ahead by marinating the chicken and pickling the red onions on Sunday. We’ll use both the marinated chicken and pickled red onions in 2 different dinner this week.

Once it’s a weeknight evening, this dish will come together in less than 20 minutes. The combination of flavors, textures, and those pickled red onions (!!) is delicious, and I know you all will love this recipe.

wednesday – 10 Minute Healthy Beef Tacos & Charred BroccolinI

This recipe was a happy accident on an evening where I was too busy to cook, but needed something easy and healthy. Packed with veggies and flavor, this is my new favorite go-to 10 minute meal for one!

ThursdayGinger scallion Chicken noodle bowls

I love a good noodle bowl, and this dish is the second recipe this week utilizing that marinated chicken and pickled red onions. I use the asha brand noodles for that extra wavy texture, but feel free to use whatever asian noodles you have on hand.
