This Tahini Lime Dressing is a creamy (but no dairy), citrusy, and nutty dressing that is perfect for salads, roasted vegetables, and grain bowls. This dressing was inspired by a fattoush salad I had at Harrods in London, and I now love to pair it with a variety of different things!

Chef Tips
- Use a food processor. Blending everything in a food processor ensures the garlic is fully broken down and the dressing becomes smooth and creamy, with no grainy bits. It also helps emulsify the tahini with the other ingredients.
- Avoid making this is large batches in the vitamix or food processor. Sometimes, garlic blended for too long will make the entire dressing bitter. I’ve had this happen when I scale the recipe and blend the garlic for too long. If you’re making a large batch of this, add the minced garlic at the end.
- The tahini lime dressing will stay fresh in the fridge for up to a week.
Ingredient Notes & Substitutions:
- Lime Juice: Fresh lime juice is best (the lime flavor is literally in the name… but if you want, you can substitute lemon for a slightly sweeter profile).
- Garlic: Adds a bold, savory kick. You can skip this if you want. I don’t love raw garlic, but find this small amount with all the other ingredients adds a great flavor profile.
- Tahini: If your tahini is extra thick (aka is hard to scoop out of the container, you may want to add some hot water to the food processor to help soften it up). You may also want to add a little more water to reach your desired consistency.
- Honey: Balances the tangy lime and nutty tahini with a touch of sweetness. Can sub maple syrup, brown sugar, or can just omit.
- Water: Adjust as needed. start with 2 tablespoons depending on the thickness of your tahini and add more for a thinner dressing.

Ingredients
- ¼ cup lime juice, juice of 2 limes
- 1 clove garlic
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ cup tahini
- 1 tablespoon honey
- 4-6 tablespoons of water depending on how thick your tahini is. Add more as needed.
Instructions
- Combine everything in a small food processor or blender. Blend until smooth and add a few couple tablespoons of water at a time if it needs to be thinned out. Taste, add more salt as needed, and pour into an airtight container.
